Melt the chocolate with the butter and cream in bain-marie. Set aside.

Beat the egg yolks with 2 tablespoon of sugar and a pinch of salt, until the mixture is light and fluffy. Beat the egg whites with 2 tablespoons of sugar and a pinch of salt until stiff.

Add the beaten egg yolks into the chocolate mixture, then add the chocolate to the stiffened egg whites, mixing gently from the bottom to the top. Add the almonds.

Put the mousse into the fridge for at least 6 hours.
