Gluten-free Rough Almond Cakes

250 grams of almonds
100 grams of corn starch
80 grams of potato starch
100 grams of butter
100 grams of sugar
Zest of 1 lemon
1 egg (separated)
Matchstick almonds

How to prepare

Bake in a preheated oven at 180ºC for around 25 minutes

Put the butter and sugar and egg white in a mixer or food processor and beat


Add the flours, lemon zest and salt, and blend


With the help of cling film, form a roll and chill for 15 minutes


Cut into rounds and form to your liking


Place on a tray lined with greaseproof paper, brush with egg yolk and scatter with matchstick almonds
